Cranberry Pistachio Oatmeal Cookies

Delicious oatmeal cookies packed with cranberries and pistachios that are sure to be a favorite.
INGREDIENTS
- 1 1/2 cup Food Club regular oats
- 3/4 cup Food Club all-purpose flour
- 3/4 cup Food Club brown sugar
- 1 egg
- 1/2 cup Food Club unsalted butter, softened
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- pinch of salt
- 3/4 cup dried cranberries
- 1/4 cup pistachios
DIRECTIONS
- Preheat oven to 350.
- Mix oats, flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
- Combine butter, vanilla, and brown sugar until creamy. Add egg and mix until combined.
- Slowly add in the oat flour mixture, mix until just combined.
- Fold in the cranberries and pistachios.
- Place 1 tablespoon of cookie batter on a baking sheet.
- Bake for 8-10 minutes.
- Remove from oven and let cool completely on wire rack.
