Cranberry Pistachio Oatmeal Cookies

Delicious oatmeal cookies packed with cranberries and pistachios that are sure to be a favorite.

INGREDIENTS

  • 1 1/2 cup Food Club regular oats
  • 3/4 cup Food Club all-purpose flour
  • 3/4 cup Food Club brown sugar
  • 1 egg
  • 1/2 cup Food Club unsalted butter, softened
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • pinch of salt
  • 3/4 cup dried cranberries
  • 1/4 cup pistachios

DIRECTIONS

  1. Preheat oven to 350.
  2. Mix oats, flour, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. Combine butter, vanilla, and brown sugar until creamy. Add egg and mix until combined.
  4. Slowly add in the oat flour mixture, mix until just combined.
  5. Fold in the cranberries and pistachios.
  6. Place 1 tablespoon of cookie batter on a baking sheet.
  7. Bake for 8-10 minutes.
  8. Remove from oven and let cool completely on wire rack.
