Strawberry Balsamic Crostini

Prep: 10 minutes plus standing - Grill: 3 minutes - Serves: 4
INGREDIENTS
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 cups chopped strawberries
- 2 tablespoons chopped fresh mint
- 8 (1/2-inch-thick) slices ciabatta bread
- 3/4 cup ricotta cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
DIRECTIONS
1. Prepare outdoor grill for direct grilling over medium-high heat. In large bowl, whisk vinegar and honey; stir in strawberries and mint. Let strawberry mixture stand 15 minutes, stirring occasionally.
2. Place ciabatta on hot grill rack; cover and cook 3 minutes or until grill marks appear, turning once. Let ciabatta stand 5 minutes.
3. Spread cheese on ciabatta; sprinkle with salt and pepper and top with strawberry mixture. Makes 8 crostini.
